At Ølsnedkeren, brewing isn’t just production — it’s a craft we pursue with pride and curiosity. Our brewery is tucked away in the idyllic North Zealand countryside, in Skævinge just outside Hillerød. Here, we’ve built a space where great equipment, sharp minds, and attention to detail come together in perfect harmony.
At the heart of our brewery is a 15hL manual three-vessel system, run without automation — just two pumps and a stirrer to help us along the way. That means we stay close to the process at every step, feeling and fine-tuning every single detail. This isn’t about buttons and screens — it’s about craftsmanship and experience.
With an annual capacity of around 3,000 hL, we’re far from one of the biggest breweries — and we’re perfectly fine with that. It gives us the freedom to stay hands-on in our work and picky with our ingredients. It also allows us to experiment, innovate, and constantly challenge our own idea of what great beer can be.
We have fermentation tanks in various sizes, allowing us to tailor the process to each beer style — whether it’s a fresh, hoppy IPA or a slowly matured lager. In 2024, we took another important step by installing our own canning line. It might sound technical, but in practice, it means we can now fill cans with highly carbonated beer under pressure — without compromising on quality. This opens up new possibilities — in terms of flavour, distribution, and the ways we can share our beer with more people.
As the brewery has grown, we’ve made use of every square metre with care. We’ve created a compact, yet efficient and well-equipped space where smart use of room meets a philosophy that blends innovation and tradition. Our manual approach also means we've come to know our equipment in a way you can't learn from a book. It speaks to us — and we listen. For us, brewing is about the collaboration between people and machines, between experience and intuition.
Brewing at Ølsnedkeren is a balance between technique and gut feeling. We believe it’s that very combination that gives beer its character, depth, and soul.
